By midweek the central cups have opened, and they open the way garden roses do rather than the way a tea hybrid does. The petals are numerous and short, and the outer ones roll back while the inner ones stay folded over the centre. The head keeps a rounded outline instead of flattening into a star. From across a room the bunch reads as a small heap of peach spheres sitting at different heights.

This is the stage most people picture when they order. The tone moves as well, and fully open the flower loses some of its depth and reads lighter, closer to a soft skin colour than to apricot.

The second half

The centre bloom goes over first, and it goes visibly, with the outer petals turning translucent at the edge. Cut it off at the base of its own short shoot instead of pulling it out, and the cluster tidies itself immediately. Within a day or two the side buds take the space, smaller than the head they replace, but fresh. The bunch then stands to the end of the week without an obvious gap in it.

Pulling a spent head out by hand tears the shoot and takes the neighbouring buds with it. That is the commonest way people shorten the life of a spray bunch, and it happens far more often than any fault in the flowers.

What the island climate does to that sequence

Above 30 °C in high humidity the bunch travels with firm wrapping and a cooling element, and the wrapping comes off the moment it arrives. Warm damp air pressed against an open cup softens the outer petals within the hour. On a closed stem it does almost nothing, which is the reason for the order in which everything below happens.

The working day is 9 AM to 10 PM. Seminyak, Canggu and Sanur sit in a 90 to 150 minute window, while Uluwatu, Tabanan and the remote villas take up to 3 to 4 hours.

The whole sequence runs shorter here than it would in a cool climate. A bunch delivered already at the midweek stage reaches its second half a day or two sooner than the buyer expects. For a fixed date we send closed stems and let the opening happen at the address, which also puts the best part of the week in front of the person who received it. From November to March we add route time for the rain, and those months are gentler on an open cup than the dry ones are. None of this needs managing beyond a cool spot away from the window.

Lisianthus and ranunculus pick up the cream end of the range and sit beside the apricot without arguing with it. Macrophylla hydrangea holds a broad block for a large build, and tropical foliage goes in sparingly, since the clusters already fill their own volume.
