Flowers: what actually decides how long they last

Two identical bunches of roses can differ by a week in vase life, and the reason has almost nothing to do with the variety printed on the label. It is the history of the stem before it reached the counter, and then a handful of very ordinary things that happen in the room it ends up in.

Most of that history is already fixed by the time you order.

The part that happens before you see them

A cut stem starts spending its reserves the moment it leaves the plant. Growers cut early, cool the boxes quickly and keep them cold through transport, because temperature is the single biggest lever on how much of that reserve survives the journey. Every break in the chain, a warm van, an afternoon on a loading bay, an hour standing on a pavement, is subtracted from the days you get at home.

That is why age of the batch beats variety when a florist judges what to sell you. A rose from a shipment that landed yesterday will outlive a supposedly hardier flower that has been in the cold room for a fortnight, whatever either of them looks like on the day.

Freshness has visible markers. Firm outer petals rather than papery ones, leaves that snap slightly instead of bending softly, cut ends that are pale and clean rather than darkened and slimy, and, on roses, an ovary just below the head that feels solid between two fingers.

Water, air and the small blockage

Once the stem is cut, water travels up a narrow column of vessels and evaporates through the leaves. Anything that interrupts that column shortens the life of the flower.

Air is the usual culprit. A stem left dry for an hour draws a bubble into the vessels, and the head wilts while the water level in the vase barely moves, which is what makes a fresh angled cut so effective as a rescue.

Bacteria are the second. Leaves sitting below the waterline rot within a day, cloud the water and block the cut surface, so stripping them takes thirty seconds and buys several days.

Heat is the third, and it works on everything at once. A radiator, a sunny windowsill or a draught of dry air from a conditioning unit will halve the life of an arrangement that was cut yesterday. Ripening fruit nearby does the same more quietly, releasing ethylene that ages open blooms and makes petals drop early.

Cold water, changed every couple of days, with a fresh cut each time. That is the whole routine.

Season, origin and why some things vanish

Peonies, lily of the valley, garden roses and ranunculus have real seasons, and no supplier can conjure them outside those windows at sensible quality. Roses, carnations, chrysanthemums, gerbera and orchids arrive year round from greenhouse production, which is precisely why they anchor so much of what a florist builds.

Hardiness varies enormously between them. Chrysanthemums and carnations will outlast almost anything in the same vase, hydrangea and peony are the first to fail in warmth, and delicate spring stems are bought for how they look on one particular day rather than for endurance.

Choosing a format around all this

A hand-tied bouquet gives the biggest gesture and asks the most in return, since somebody has to unwrap it, trim it and find a vase within the hour. Boxes and baskets arrive already sitting in wet foam, so they suit an office, a hotel reception or anyone who will not be free to deal with stems. Arrangements in ceramic or glass are built for one spot and travel worst of the four.

For a recipient in Rotterdam who is rarely home, sturdiness matters more than size, and that alone rules out half the catalogue before colour is even discussed.
