White baskets: the colour a florist can always build from

Ask for a large arrangement in coral, in deep burgundy or in true blue on a Tuesday afternoon and the answer depends on what came in that week. Ask for white and the answer is yes, in almost any season, at almost any size.

Every commercial flower crop includes a white variety, and most of them are the reliable ones.

Why availability matters more in a basket

A hand-tied bunch needs a dozen or so stems in the leading shade. A container arrangement needs several times that, all reading as the same colour, all opening at roughly the same pace, and it has to hold that appearance for as long as the composition stands rather than for one evening.

That is a supply problem before it is a design problem. A shade that arrives in small quantities can be built into a bouquet from a single box, but filling a large basket with it means either mixing varieties that do not quite match or waiting for a delivery. White removes the constraint, which is why it turns up at short notice, at short deadlines and at the largest sizes.

Roses, chrysanthemums, lisianthus, carnations, gerbera, alstroemeria and orchids all have dependable white forms, and between them they cover the whole year. Seasonal additions come and go on top of that: tulips and hyacinths in spring, peonies for their short window, hydrangea through the warm months.

White is not one shade

The catch arrives with the quantity. Cut white flowers rarely sit at pure cold white: most carry a cream, green or faintly pink base, and the base differs by variety and sometimes between one grower's batch and another.

Two stems side by side in a bouquet look fine. Forty heads packed into a container, seen from above in daylight, sort themselves into groups, and the arrangement reads as slightly dirty without anyone being able to say why.

The way round it is to separate rather than to match. Foliage between the groups, or a deliberate run from the greenest white through to the creamiest, turns an accidental mismatch into a gradient. Trying to buy forty identical whites from mixed sources rarely ends well.

What it costs to look after

Nothing on a white petal is hidden. A bruise from assembly or from the rim of the basket browns within a day and shows from across the room, and lily pollen leaves a rust mark that water only drives deeper, so the anthers are usually removed before the flowers go in.

Dust shows earlier on white than on anything else, and a soft dry brush is the only safe way to take it off.

Where it earns its place

The breadth of occasions is the practical argument. A birth, a wedding table, a recovery, a formal thank-you, an apology that has to sound sincere rather than romantic: white baskets sit correctly at all of them, and in a room whose walls and lighting you have never seen it is the shade least likely to clash with anything.

Two cautions go with that. Lilies and chrysanthemums in white read as a funeral tribute to a good many people, particularly in a large standing shape, so for a happy occasion the safer build is roses, lisianthus or peony-shaped varieties with loose informal greenery.

And white on a white wall disappears at four paces, which is a real problem for an arrangement that stays in one spot. If the recipient in Rotterdam works in a pale office, the greenery needs to be darker than the scheme suggests, or the outline goes.
