A calla is all silhouette. A smooth stem with no leaf on it, a single funnel at the top, nothing else. That is why callas are never bunched tightly: five in a narrow vase look more finished than twenty five crammed into a cone.

Which sets the rule for the whole category. Calla bouquets are judged by shape rather than volume, and adding stems changes the character of the arrangement rather than its size.

What the stem does in water

Calla stems are thick, fleshy and entirely without woody support. They take up water quickly and go soft at the cut end if left standing deep.

  • Fill the vase three or four centimetres, no more.
  • Change the water daily and recut with a sharp knife every second day.
  • Never use scissors. They crush the tissue and the stem stops drinking.
  • Fingerprints mark the stem and stay visible, so carry the bouquet by its wrapping.

One behaviour alarms first time buyers. Calla stems curve and twist in the vase over several days. That is a normal response to water and light, and florists design with it deliberately rather than trying to prevent it.

Two types, two different purchases

The shelf usually holds both, and they are not interchangeable.

Large white calla, the classic aethiopica type, is sold by the stem. Long, thick, with a spathe about the size of a palm. Three make a graphic arrangement and seven make a formal bouquet.

Coloured calla is smaller, and the palette is wide: yellow, orange, pink, deep red, almost black. The small varieties come in bunches and work by volume.

Callas suit people who care more about the line of a bouquet than the number of petals in it.

Callas carry two readings at once. In wedding work the white calla bridal bouquet is a fixture that has survived decades of changing fashion. At the same time, in several European traditions white callas belong to funerals.

Colour and context separate the two. Coloured callas read as celebratory nearly everywhere. White ones tied strictly with foliage lean towards the ceremonial.

For a corporate gift, a milestone birthday or a congratulation to a senior colleague, callas work well: restrained, unscented, with no romantic implication attached.
