Gypsophila stopped being filler and became the bouquet

For decades gypsophila went into arrangements as background, something to close the gaps between roses. Now it is bought on its own, and a dense cloud of tiny white flowers works perfectly well as a gift with nothing else in it.

The shift is less about minimalism than about physics. Gypsophila delivers enormous volume for very little weight, costs little, and reads as a complete object without a single large bloom anywhere inside it.

Three things worth knowing first

Fresh gypsophila has a smell, and it is a particular one. Not floral so much as green with a honeyed edge, quite noticeable in a closed room for the first few days, then fading.

Density decides everything. A sparse bunch looks like the leftovers of somebody else's arrangement. A tightly packed one becomes the cloud people are actually buying.

Coloured versions are dyed, usually through the stem, and the pinks, lilacs and blues on the market are made that way. That is standard practice rather than a trick, but dyed stems can transfer onto pale wrapping and onto hands if they get wet.

Vase life, and the second act

In water it lasts around a fortnight and asks for almost nothing: a clean vase filled to a third, and the lower greenery stripped off.

Then the useful part begins. Gypsophila dries standing exactly where it is, holding its shape and nearly all of its colour. Forget to top up the water once and a week later the room contains a dried arrangement that will keep going for months.

• To dry it deliberately, leave the bunch in an empty vase somewhere dry and out of direct sun.
• Hanging it upside down keeps the heads tighter and more compact.
• Do not put dried gypsophila back into water. It softens and loses the shape immediately.

This is the only common bouquet that gets relocated rather than thrown out once it dries.

Who it suits

A single variety gypsophila bouquet is light in tone and carries no romantic pressure. It goes to a friend, a colleague, a daughter, a maternity discharge, a first date, a first meeting with someone's parents, or to your own kitchen table as long lasting decoration.

Inside mixed work it remains irreplaceable. It puts air between roses, props up peonies and makes a modest bouquet look considerably larger without moving the price.
