French (reflexed) roses: choose them for a date, not for a fortnight

Two bunches of the same rose can look like different flowers. In one the buds are closed and pointed, in the other the heads are wide open and half again as broad, and the only thing that separates them is an hour of somebody's hands.

Reflexing is a florist technique, not a variety. The petals of an ordinary rose are folded back one at a time until the closed cup opens out.

What you are trading

Every reflexed petal has been moved out of the position it grew into. The tissue at the base is stretched, and the outer rows that used to shield the centre now face outwards with nothing in front of them.

So the flowers look their best on the day they are made and decline faster than the same roses left alone. Dry air takes the petal edges within hours. Fingers mark them. A closed bud shrugs off a car journey that would crush an open head.

This is not a fault in the work. It is what the technique costs, and any florist who tells you otherwise is selling something.

When the trade is worth making

Think about the moment the flowers exist for. If that moment is an evening, a ceremony, a photograph, a table set for two, a handover in front of a room, then the format earns its place: nothing else makes a rose read that large and that open on demand.

If the flowers are meant to sit on a hallway table all week, the same money buys more by leaving them alone. Ordinary roses open on their own over several days and hold for a week or more with clean water.

Ask one question before ordering. Does the recipient need this bunch to look impressive now, or to still be alive on Friday.

Order ahead. Folding a single head back takes minutes, a large bunch takes more than an hour of concentrated handwork on top of the normal build, and the work cannot be started days early because reflexed heads do not wait.

Not every rose can be treated this way. The technique needs a many-petalled variety with substantial tissue, since thin petals tear at the base, and it needs a bud at exactly the right stage, neither rigid nor already loose.

Handle the finished bunch as little as possible. A wide-necked vase keeps the heads from pressing against each other, and cool air away from a heater, a sunny window or an air conditioning vent slows the drying at the petal edges.

Tell whoever accepts the delivery in Dushanbe to lift the bouquet by the stems rather than the wrapping, and to unwrap it straight away instead of leaving it in the box until the evening.
