Tall roses: keeping a long stem drinking

Everything difficult about a long stem comes down to plumbing. Water has to travel from the cut end to the bud against gravity, through vessels that are easily blocked, and the further it has to go the less forgiving the flower becomes.

A short rose survives a careless week. A long one does not.

Bent neck

The classic failure has a name in every flower shop. The head folds over an inch or two below the bud while the petals still look perfectly fresh, and the bouquet goes from upright to drooping overnight.

The cause is a shortfall, water arriving at the bud more slowly than it evaporates from the petals and leaves. Blocked vessels at the cut, an air lock drawn in when the stem was out of water, warm room air pulling moisture out faster than the stem can replace it: any of these will do it, and on a long stem the margin is thin enough that one of them is usually enough.

Catch it early and some stems recover. Recut two or three centimetres at a sharp angle, lay the whole rose flat in a sink of cool water for an hour or two so the petals take up moisture directly, then return it to a deep vase. The longest grades come back less often than the middle ones, which is the plain arithmetic of the distance involved.

Water depth and cleanliness

Fill the vase deep, at least a third of the stem, and top it up daily. Long stems drink noticeably more than short ones and a summer room can drop the level by several centimetres in a day.

Cloudy water is the other half of the problem. Bacteria multiply in warmth and seal the cut within a day, after which no amount of topping up helps, so change the water completely and rinse the vase each time. Strip every leaf that would sit below the waterline, since submerged foliage rots first and feeds everything else. Flower food helps only in clean water. None of this is optional at eighty centimetres, whereas a short bouquet forgives a skipped day.

Cut with a sharp knife, never with blunt scissors.

Scissors crush the vessels flat at the exact point where the flower needs them open, and on a long stem that alone can cost several days.

Heat, draughts and neighbours

Keep the vase off a windowsill in direct sun, away from a radiator and out of the path between an open window and a door. Moving warm air dries petals from the outside in, and the stem cannot keep pace. A bowl of apples or bananas nearby releases ethylene, which brings the buds on early.

Cool nights extend the life of tall roses more than anything else you can do at home.

Practical extras

Use a heavy vase, floor standing or wide based ceramic. Long stems act as levers, and a light vase goes over at the first knock, which usually costs the bouquet as well as the tablecloth.

Expect the stems to be trimmed to suit whatever container is there, and take the extra length as a reserve rather than a loss.

Fresh cut roses hold one to two weeks with this routine, sometimes a few days longer in a cool room. For a recipient in Amsterdam who has to carry the bouquet home before it reaches water, ask the shop to send it in a water pack, because the hours spent dry are the ones that decide how the following week goes.
