Flowers are received by one person. A tray of macarons in the same box is passed round a table within minutes, and that single difference explains why this format turns up in offices, staff rooms, clinics and family kitchens far more often than in romantic settings.

It is a gift with no subtext, which makes it easy to send.

The occasions it fits

A thank you to somebody you work with, where a large bouquet would be read as something else entirely. The box goes on a shared desk, the biscuits get eaten by people who never learn who sent them, and the flowers stay behind as the part addressed to one person.

An apology works on the same principle. Sweet things are easier to accept than a declaration, and the flowers stop the gesture from looking casual.

Then there are birthdays in a house with children, where the split does the work by itself: the small hands go for the coloured shells and the adults keep the arrangement.

Hospital visits and new babies are the fourth group, though there the rule is simply to ask first, since not every recipient is allowed sugar or flowers in the room.

Two climates in one container

A macaron holds a narrow moisture balance. Dry it out and the shell shatters instead of yielding; let it take up damp and the crust goes soft and chewy. Wet floral foam sits on the other side of the same box, evaporating all day.

The divider between them is the whole engineering of this format. It must be waterproof, it must run the full height of the wall down to the base, and the macarons themselves sit in their own tray or cassette rather than on the floor of the box.

You can check the build without dismantling anything by lifting the shell nearest the flowers and looking at its underside.

The second route for moisture comes from above. Cut flowers are misted before dispatch, so nothing in the arrangement should overhang the sweet side, and a well built box keeps the outer stems on their own side of the wall.

The first hour, and what to serve them from

Treat it as food on arrival. Chilled storage in a closed container for the macarons, water poured at the rim for the flower half, and the lid left slightly open in between.

A shut lid is the usual mistake. Cold shells in a warm room sweat, the moisture gathers on the underside of the lid and drips back down onto the glaze, and by evening the colours have gone patchy.

Coming the other way, out of the fridge and onto a table, they want a little time to warm through before anyone eats them.

What goes into the flower half

Short dense heads without a strong scent, because scent travels under a closed lid and settles into almond and buttercream. Lilies are kept out for a plainer reason: the pollen marks everything it touches and does not come out of fabric.

The arrangement itself is modest by design, since half the container has gone to something else. Anyone expecting the mass of a full box should order the two things separately, and a recipient in Amsterdam who wants the flowers to last will be taking the macarons out on the first evening in any case.
