Peonies delivered in Sydney: varieties, season, and local farms

The peony is one of the most emotional flowers in floristry. A full, rounded bud, a soft honeyed scent, and dense layers of petals create an effect neither roses nor ranunculus can copy. In Sydney it is the favourite flower of spring weddings: at ceremonies in Paddington, Surry Hills, and Darlinghurst, the peony shares first place with the garden rose.

The category covers herbaceous, tree, and Itoh hybrid peonies across the most-requested varieties. Unlike the rose, the peony is an honestly seasonal flower in Sydney. Most stems come from New South Wales, Victorian, and Tasmanian farms through the wholesale Sydney Flower Market at Flemington. Out of season peonies are hard to find — and that is fine; the best bud only comes in its own months.

Key varieties in the catalogue

Each peony variety solves its own task — from a classic romantic bouquet to a complex wedding composition. They differ in bud shape, colour, fragrance, and vase life.

  • Sarah Bernhardt — a 1906 classic, pale-pink ruffled bud up to 18 cm, honey scent. The safe universal choice for weddings and anniversaries.
  • Karl Rosenfield — deep-red, dense bud. Suits dramatic wine palettes.
  • Festiva Maxima — white with a crimson fleck at the centre. The most photogenic white peony, a wedding florist staple.
  • Coral Charm — shifts from coral-peach to cream-yellow as it opens. One of the defining varieties of the 2020s.
  • Duchesse de Nemours — soft white with a cream heart, light vanilla fragrance, romantic presentation.
  • Itoh hybrids (Bartzella, Cora Louise) — a cross of herbaceous and tree peony, larger and longer-lasting than standard varieties.

Cut stage and why it matters

The key rule when buying peonies is the "marshmallow" stage. That means a coloured bud still soft to the touch. If it springs back like a marshmallow when gently squeezed, it will open in 1–2 days and live 7–9 days. If the bud is hard and green, it may not open at all. If it is fully open, expect a maximum of 2–3 days.

Every batch is checked by a florist by hand against this criterion. Only "marshmallow" buds of the right firmness ship to a Sydney recipient — giving them the full cycle of bloom, not the tail end of a fading flower.

Seasonality and logistics

The natural peony season in Australia is spring into early summer, roughly October through December. New South Wales and Victorian farms open the season first; cooler Tasmania picks up later and carries the bloom toward the end of the year. In those weeks the market fills with local stems — the freshest and most affordable peony of the year. Stock arrives at the Sydney Flower Market at Flemington, and we build bouquets on the delivery day.

For the city we synchronise the delivery date with the opening moment. This matters especially for spring weddings and spring racing season events in Paddington, Surry Hills, and Newtown: the peony has to open at the right hour, not the day after the celebration.

"The peony does not forgive rush. If you want it to do real work, order 3–4 days ahead and let the bud open in the recipient's room. And remember: this is a seasonal flower — outside spring it honestly isn't around. A freshly delivered closed peony is an investment in the moment, not the moment itself."

Wedding bouquet of peonies and eucalyptus for Sydney

Compositions and occasions

The peony has been the headline flower of spring weddings in recent years. Bridal bouquet, buttonholes, arch and table dressing — it works everywhere. Second place: anniversaries — 25, 30, 35 years are often marked with peonies. Third: spring racing season events and high-value corporate gifts.

Mixed bouquets of peonies and garden roses are a category of their own. The two flowers sit close in form and texture and complement each other in palette and vase life. At the peak of the season both come from local farms, so the bouquet is genuinely fresh. Managers will advise on proportions and the right stem count for the budget.

Delivery specifics

Sydney has a humid subtropical climate. In spring and early summer, heat waves up to +35…+40 °C can roll in, and high humidity adds load to a delicate bud — in stuffy air grey mould appears quickly on the petals. On hot days we carry peonies in thermo-boxes and add a water-retaining gel to the stems so the flower does not wilt in transit. The afternoon heat is often broken by a sharp southerly wind — the local southerly buster — but by then the bouquet should already be in the cool. We deliver in Sydney carefully, choosing the packaging to match the weather of the day.

We cover every key district: Sydney CBD, Surry Hills, Paddington, Bondi, Manly, North Sydney, Parramatta, Darlinghurst, Newtown. Catalogue prices are in Australian dollars (AUD, $), payment by card online. The season is short, so for spring weddings and Christmas (which falls at the season's tail), order 3–4 days ahead — peak dates sell out fast.

Care at home

After delivery, recut the stems at a 45° angle, strip every leaf below the water line, place in a tall vase with cool water. Change the water every two days. Keep away from fruit and heaters — ethylene and heat halve a peony's vase life.

Summer heat and humidity are the peony's main enemies in Sydney: a split system dries the air and the bud quickly, while stuffy air invites mould on the petals. Place the bouquet in the coolest room with moving air, away from the direct flow of the unit. On days above +30 °C, move it to the fridge overnight — that adds 2–3 days of flowering.
