Cream roses in Dubai: the same flower carries two different messages
Cream is the one rose shade that goes out on Saturday as a celebration and on Monday as condolence, in both cases as the main colour and in both cases correctly. The stems are identical. What separates the two readings is the greenery, the wrapping and the shape of the arrangement, and anyone sending cream flowers is producing one of those readings whether they intended to or not.

The shade works for sympathy because it is quiet without being severe. White on its own can read as clinical, colour reads as celebration, and cream sits between the two, which is why it became the default for condolence work across a great many traditions rather than within any one of them.
Built for that purpose it is low or elongated rather than round, with dark green material, no bright filler and no decorative ribbon. Those choices, and not the roses, are what make an arrangement legible as sympathy from the doorway.

Four things decide which reading arrives. Bright accents come first: even a few stems of something coloured push a cream arrangement firmly towards celebration. Ribbon does the same, particularly anything wide or glossy.
Shape matters next, since a compact round bouquet reads as a gift and a long low arrangement reads as a tribute, and that difference registers before anyone is close enough to see individual flowers.
Wrapping finishes the job, with pale paper or a soft fabric for a gift and plain dark green or nothing at all for the other case.
Size is the signal people get backwards. It does not decide the reading at all. We have sent modest bunches that arrived as tributes and substantial ones that arrived as gifts, and in both cases the difference came down to a ribbon and a shape rather than to how much was in the box.
The card does not rescue a mismatch either. By the time anybody reads it they have already decided what the flowers are.
