### Juliet spray roses in Dubai: what arrives on day one The bunch handed over at the door and the bunch standing on the table four days later are not the same object. Each stem holds a cluster, the central bud runs ahead of the side ones, and the side ones take their turn only once it has finished. The thing keeps rearranging itself while you watch it. That is the whole character of the variety, and it decides when the bunch should be bought. #### Day one Stems usually arrive with the central bud showing colour and the cup still shut, with the smaller buds around it tight and slightly green at the tip. The apricot tone is at its deepest at this stage, because the petals are still layered over one another and the shadow inside the cup darkens everything under it. Nothing much happens on the first evening beyond the flowers drinking. Day one looks quieter than the photograph. That gap catches out anybody ordering from a catalogue image. The picture shows the middle of the week, when the cups have rolled back and the bunch is at its widest, and the flowers that arrive on the doorstep are three days behind it. Neither version is wrong. The choice between them is a choice about who gets to watch the opening, and it is worth making on purpose. #### Where it goes, and what that changes The address decides how long the bunch stays wrapped, and that is the only variable we can plan around. - Downtown and Business Bay: an office in most cases, where the wrap comes off within minutes of arrival. - Marina and JBR: home addresses, and a vase is usually found straight away, which is the best case a closed bunch can have. - Palm Jumeirah: the long leg of the route, so these go out tighter and earlier in the day. - DIFC: business handovers, where the bunch is often carried into a second room before anyone opens it, and for those we cut the stems longer and bind looser so the clusters have room. We work 9 AM to 10 PM, delivery runs 2 to 4 hours, orders start at 250 AED, and payment goes by Apple Pay or cash to the courier. Summer compresses the timetable. The season runs to 40 °C with high coastal humidity, and a warm room takes the central cup through its first stage faster than the usual reckoning allows for. We add insulated packing and keep the bunch out of direct sun at every stop. In the car it travels in the shaded part of the cabin. What all of that buys is the first day itself, which is the day the colour is at its strongest and the day most senders never see. Dutch roses at 60 to 90 cm in cream sit next to this variety more often than anything else and hold the pale end of the range. Ecuadorian stems up to 120 cm go into the tall work with the apricot clusters placed at mid height.
