Ask anyone over fifty about roses and they will tell you the flowers used to have a scent. They are not imagining it. Commercial breeding spent decades selecting for stem length, uniform heads and survival in a cold lorry, and fragrance was among the things quietly traded away.

What the scent actually does

It is not constant, which surprises people. A freshly delivered bud gives almost nothing, and the smell arrives on the second day as the outer petals begin to fold back and open the centre. Warmth strengthens it, so a vase near a sunny window will scent a room by mid morning and go quiet again after dark.

The register varies by variety rather than by colour, though there are loose habits. Pale cream and blush types tend towards tea and light citrus. Deep pinks and apricots run heavier and sweeter, closer to what people mean when they say old-fashioned rose.

This is worth thinking about before you order. A scent that fills a hallway pleasantly can be too much in a small bedroom or on a dining table where food is being served, and a large bunch of the heavier varieties in a closed room is a real presence rather than a background note.

The shape follows from the same breeding

These are many-petalled flowers. The petals sit in dense short layers, the outer ones bend outward into a cup and the centre stays packed, sometimes divided into several distinct quarters as it opens.

The head therefore grows. A bouquet that looked correct on delivery day will be considerably wider by the middle of the week, because each bloom opens far further than a standard long-stemmed rose ever does.

Florists allow for that by leaving gaps.

If your bouquet arrives looking slightly airy between the heads, that is the build working as intended rather than a shortage of flowers. Packed tight, the same stems have nowhere to expand into by day three, the outer petals crease against their neighbours, and the arrangement turns into one undifferentiated mass. It is one of the few cases where a looser bunch is the more expensive piece of work.

The combination of scent and a soft open form pushes the whole thing away from the formal end of the rose scale. A dozen red long-stems makes a declaration and everyone in the room knows it. Garden rose bouquets say something quieter and more domestic, which makes them easier to give to a mother, a long-standing friend, a colleague leaving after many years, or a partner on an ordinary weekend with no occasion attached.

They photograph unusually well for the same reason the shape works in a room, since the cupped head holds light inside it instead of reflecting a hard edge.

Two practical points. Vase life runs a little shorter than a standard rose, because thin petals dry at the edge sooner and the packed centre can brown in a dry room, and an open cup catches moving air across its whole surface, so a spot under an air conditioner will crisp the petal edges within hours. Ordinary rose care covers everything else: an angled cut, deep water, daily changes, no leaves below the waterline.
