### Sunflower bouquets in Bali: a field crop on a short calendar The sunflower reaches a counter as a field crop that happens to be sold by the stem. It comes off open ground through the second half of summer, in volume, and those are the weeks when the discs are widest, the stems longest and the petals firm instead of papery. Ordered well outside that stretch, the same flower turns up with a head half the size on a stem cut short to match. Season shows on this one more plainly than on almost anything else we sell. Peak supply is short and generous. Stems come in long, often over a metre, which lets a florist cut down to any height without wrecking the proportions of the bunch. Whole fields clear at once, so the price sits at its lowest of the year at exactly the moment the quality sits at its highest. Getting that bulk to a Bali address is the next question. Seminyak, Canggu and Sanur run on a 90 to 150 minute window, while Uluwatu, Tabanan and villas further out take up to 3 or 4 hours, and a box of sunflowers is heavier and larger than the same order in roses. Macrophylla hydrangea manages it on sheer volume of head. Tropical foliage brings weight and structure without competing for attention. Long Ecuadorian roses, the ones running up to 120 cm, work on height rather than on mass, and they let a florist build depth into a bunch instead of a flat front. What does not work is filler. Anything fine and airy next to a saucer sized disc reads as a gap in the arrangement, and the loose gathered look people want from these bunches is the first thing to go. The assembly follows from the stems themselves. Thick stems will not spiral, they break where they cross, so these bouquets get built with the stems close to parallel and the heads staggered by height so they do not knock against each other. Good work is visible from the side. Height is worth deciding in advance for the same reason. A long stemmed bunch wants a tall vessel and floor space around it, while a villa dining table usually wants the whole thing cut down by a third. We can do either, but the cut happens in the workroom and not afterwards with kitchen scissors over a sink. #### When the date will not move Some orders land on a fixed day that has nothing to do with the growing calendar. A birthday in the wrong month, a housewarming, a friend finishing something difficult and needing to be told so. In those cases, changing the flower usually beats insisting on the species.
